Ingredients

  • quarter pound of spinach
  • 1 bundle of glass noodles
  • minced garlic
  • oil
  • sichuan peppercorns
  • soy sauce
  • sugar
  • salt

Procedures

  1. soak glass noodles in water for 20 minutes
  2. boil glass noodles in water until soft, then remove
  3. blanch spinach in water, then stack on top of glass noodles
  4. top with minced garlic
  5. heat oil with 3-4 sichuan peppercorns until smoking
  6. pour hot oil on garlic
  7. season with soy sauce, sugar, and salt to taste

Notes

  • glass noodle bundles are around 40g in the pink fishnet package that i buy them in
  • the above is the general ratio to work with, but might need more spinach depending on how blanched you like them
