Ingredients
- The toughest, cheapest cut of beef you can find
- Oil
- italian sofritto
- Beef broth, red wine, or water to deglaze
- Diced tomatoes
- Tomato paste
- Bay leaf
- Star anise
- Thyme
- Rosemary
- Pepper
- Salt
Procedures
- Preheat the oven to 425F
- Cut the beef into 1-inch cubes
- Heat the dutch oven on the stove, add oil
- When oil is shimmering, drop the beef to sear on all sides
- Remove the beef when done
- Fry up sofritto, deglaze
- Add the beef back in, along with diced tomatoes, tomato paste, and more deglazer to cover everything
- Add bay leaf, star anise, thyme, rosemary, and pepper
- Cover and bake in the oven for 2.5 hours, or until tender
