Ingredients

  • The toughest, cheapest cut of beef you can find
  • Oil
  • italian sofritto
  • Beef broth, red wine, or water to deglaze
  • Diced tomatoes
  • Tomato paste
  • Bay leaf
  • Star anise
  • Thyme
  • Rosemary
  • Pepper
  • Salt

Procedures

  1. Preheat the oven to 425F
  2. Cut the beef into 1-inch cubes
  3. Heat the dutch oven on the stove, add oil
  4. When oil is shimmering, drop the beef to sear on all sides
  5. Remove the beef when done
  6. Fry up sofritto, deglaze
  7. Add the beef back in, along with diced tomatoes, tomato paste, and more deglazer to cover everything
  8. Add bay leaf, star anise, thyme, rosemary, and pepper
  9. Cover and bake in the oven for 2.5 hours, or until tender
