Ingredients

  • 1 tomato per person
  • 1 egg per person
  • oil
  • soy sauce
  • water
  • salt

Procedures

  1. slice tomato into bit sized chunks
  2. beat egg, season to taste
  3. heat oil in pan until smoking
  4. drop egg, stir fry until firm, then add tomatoes
  5. stir fry until tomatoes become soft
  6. deglaze with soy sauce, add some water
  7. reduce until desired consistency
  8. season to taste with salt

Notes

  • for extra flavour, add some tomato paste with the water
