Ingredients
- 1 tomato per person
- 1 egg per person
- oil
- soy sauce
- water
- salt
Procedures
- slice tomato into bit sized chunks
- beat egg, season to taste
- heat oil in pan until smoking
- drop egg, stir fry until firm, then add tomatoes
- stir fry until tomatoes become soft
- deglaze with soy sauce, add some water
- reduce until desired consistency
- season to taste with salt
Notes
- for extra flavour, add some tomato paste with the water
