Ingredients

  • 1 whole chicken
  • 1/2 pound of baby potatoes
  • 1 onion
  • 1/2 garlic
  • compound butter with herbs of your choice, salt and pepper

Procedures

  1. rinse out chicken and leave uncovered in fridge for 1/2 day to dry out skin, will leave the skin crispy
  2. preheat oven to 350F
  3. toss baby potatoes with olive oil, salt, pepper, and 1/2 of the onion
  4. starting from the back of the chicken, peel back the top layer of the skin on the breast and push a spoon through to the front of the chicken
  5. fill the space under the skin with compound butter
  6. stuff the inside of the chicken with the rest of the onion and the garlic
  7. place baby potato mixture on a baking sheet, and place chicken on top
  8. bake for 1 hour or until reaching internal temperature of 165F, basting with juices throughout
  9. rest for 20 minutes before carving
