- rinse out chicken and leave uncovered in fridge for 1/2 day to dry out skin, will leave the skin crispy
- preheat oven to 350F
- toss baby potatoes with olive oil, salt, pepper, and 1/2 of the onion
- starting from the back of the chicken, peel back the top layer of the skin on the breast and push a spoon through to the front of the chicken
- fill the space under the skin with compound butter
- stuff the inside of the chicken with the rest of the onion and the garlic
- place baby potato mixture on a baking sheet, and place chicken on top
- bake for 1 hour or until reaching internal temperature of 165F, basting with juices throughout
- rest for 20 minutes before carving
